Since I have a newborn, I can't really be freezer cooking for 3 months right now. I've been frustrated trying to plan out this meal plan for the month, that I gave up and decided to just plan until next week. My parents came up for about a month to help us and they left some things in the pantry, most of which I don't normally buy at all - boxed potato casserole, canned vegetables and cake mix. I'm going to try and use these up this week.
Thursday - Chili & potato casserole
Friday - Salmon patties, green beans, red potatoes
Saturday & Sunday - Chicken Divan
Monday - Israeli couscous
Tuesday - Chili & potato casserole
Wednesday - Quinoa & black beans, asparagus
Thursday - Israeli couscous
Things I will be making in addition this week:
- bread
- granola bars
- salsa
- boiled eggs
- pancakes (for the month)
This will be my first week returning to cooking since August! I was on bed rest off and on from Sept until I had the baby at the end of Nov. Then, I've been on rest from my c-section until today when she cleared me to go ahead and return to daily activities (as long as the pain isn't bad). So.....here I go, it has been a LONG time but I'm so ready to have homemade things!! My parents cooked for us while they were here for the month of Dec. but since then we have been eating fast food and frozen meals. It will be wonderful to eat the above meals, all of which are meatless, except the chicken divan on the weekends and salmon.

I understand a little. We have been traveling and moving since August. We ate out all the time and I used a lot of my freezer stock. Then once we moved we ate out because everything was chaotic. I have been cooking solid for the last few weeks and it felt weird..but good. I was ready for good real meals. What I found the hardest was meal planning and shopping once I made myself get back on track.
It is hard to get back on track I'm finding, but it takes 30 days to make a habit.....so hopefully things will get easier for me! :)
