I haven't freezer cooked for so many hours in a long time and I'm hurting! I'm not sure I can do more tomorrow, so I may put off the rest until Monday. I guess I have to ease myself back into this. I did get a lot done:
White Bean Dip
Navy Bean Alfredo
I had made a lot of white beans and intended them for another recipe but they cooked faster than they were supposed to and they were too mushy for the meal I had planned them for. So, I ended making some white bean dip to freeze and also put a container in the fridge to eat with pita bread or veggies.
White Bean Dip for the Freezer
2 cups white beans - cooked
1 tablespoon lemon juice
2 tablespoons chicken broth
2 tablespoons olive oil
1/4 teaspoon garlic powder
1 teaspoon salt
pinch of cayenne pepper (optional)
Put all in food processor and blend. Spoon into quart-size freezer bags and freeze.
